Pacific mackerel, scientifically known as Scomber japonicus, belongs to the family Scombridae. It is often referred to as chub mackerel or Japanese mackerel in different markets. The species is widely distributed across the North Pacific, from the coastal waters of East Asia to the western coast of North America. The fish has a streamlined body with blue-green dorsal coloring, silver flanks, and distinct wavy dark bands along the back. Its average commercial size ranges from 200 grams to 800 grams, although larger specimens over 800 grams are available during peak season. mackerel is a fast-growing species, reaching marketable size within one to two years, which contributes to its stable supply and affordability compared with larger pelagic species such as tuna or swordfish.
